For the marinade

75g chopped shallot or yellow onion
Freshly ground black pepper
½ tsp Chinese five-spice powder

½ tsp molasses or dark amber honey

1½ tbsp rapeseed (or other neutral oil)
560g of boneless pork shoulder (or you could use well-marbled beef steak, prawns, or boneless and skinless chicken thigh)
170-220g dried round rice noodles
55g unsalted roasted peanuts or cashew pieces, coarsely chopped if large
40g fried onions or shallots (optional)
300g baby lettuce mix, cut into narrow ribbons, with spines intact
3 or 4 handfuls bean sprouts
